Ingredients for the dough:
- 3 eggs
- 2tbsp sparkling water
- ½ tsp salt
- 350g flour
Ingredients for the stuffing:
- 1 onion
- 2 old bread buns
- 1 bund parsley
- 300g fresh spinach
- 50g bacon cubes
- 250g mince
- 20g butter
- 1 egg
- 1 egg yellow
- Salt, pepper, nutmeg
Whisk the eggs with water and salt and give flour to it. Knead it to a smooth dough. Put it in the refrigerator for an hour to rest.
Let the old bread buns soak in water while dicing the onions for the filling. Then squeeze the water out of the breads and rip them into small pieces. Following clean the spinach, put it into boiling saltwater to blanch it. Then rinse it with cold water and chop it and the parsley Heat the butter in a pan and gently roast the onions with parsley, bacon cubes and bread buns. Put it into a bowl and let it cool down a little until you put the mince, eggs and spinach in it. Spice the mic with salt, pepper and nutmeg.
Flour a countertop and roll the dough very thin with a noodle machine. Distribute the filling on the dough, roll it up and cut raviolis out of it.
Simmer the raviolis in saltwater for 6 to 8 minutes.
