Chaniotiko Boureki (Chania Savoury Pie)


Preparation Time: 40 min. Cooking Time: 1 ½- 2 hours               Serves 8-10


Ingredients

For the dough                            

500 gr. all purpose flour                                       3 tbsp. olive oil                                                     1 small glass of 50 ml of tsikoudia                                 1 glass tepid water                                               ½ teaspoon salt      

For the filling

1 kg potatoes peeled and cut into thin slices (use a mandolin if available) 1 1/2 kilo of courgette cut into thin slices 1 bunch of spearmint 1 cup of flour for all uses 1 kg mizithra (creamy Cretan Cheese) 200 gr of grated cheddar/graviera 1 cup of olive oil 4 tbsp staka (Cretan product) Sesame seeds for sprinkling Salt and Pepper

Preparation

Prepare the dough

Pour the water, the oil, the salt and the tsikoudia into the flour and knead them well

Cover the dough and leave it for about 30 minutes to rest

Divide the dough into two parts and roll out two medium sized sheets

Apply the one sheet of dough to a large greased baking tray

Place potatoes, courgettes and mizithra in layers

Sprinkle a little salt and pepper on each layer, some spearmint, some flour, a little cheddar and staka

Also, drizzle some olive oil on top

Place the other phyllo pastry on top and smear it with some oil and sprinkle it with sesame seeds

Cut the pie into squares and bake in a preheated oven at180o C for 1 ½ hour until it turns golden brown.

Allow to cool before serving.
