Mantecados

INGREDIENTS:

-200 gr. pork butter (fat, manteca).

-200 gr. sugar.

-200 gr. ground and toasted almond (optional)

-400 gr.flour.

-2 small eggs or a big one.

- grated lemon zest.

- sugar + ground cinnamon to put on the cookies.

METHOD:

- Pre-heat the oven at 180ºC.

- Pour the egg(s), the grated zest of one lemon and the pork butter into a big bowl and blend it all out.

- Add the sugar and the almond. Mix everything thoroughly.

-Incorporate the flour little by little in four stages, mixing it well with the dough each time you add a part.

- Knead the dough until it is ready to be spread.

- Make the cookies with a mold.

- Place them on a baking sheet using non-stick oven paper.

- Put some sugar + cinnamon mixture on top of the cookies before putting them into the oven.

- Bake your cookies, mantecaos, at 175ºC for about 25 minutes. During the first 15 minutes, bake them only from the bottom and the other 10 minutes, use both the top and the bottom selector knob.

- When they are light brown, they are done, so …, enjoy eating them.
