Pumkin biscuit

INGREDIENTS:

- 400 grams of roasted pumpkin

- 400 grams of flour

- 4 eggs ams of sugar

 4 eggs

- 280 dl olive oil

- 16 grams baking powder ( 1 bag Royal brand or similar)

- 2 small bags of baking soda for pastry

- Powdered sugar


METHOD:

- Preheat the oven at 175ºC

- Put the roasted pumpkin, without the peel and the pips, the sugar, the oil and the eggs into a deep bowl and mix them well.

- Stir all these ingredients for some minutes. You can use an electrical mixer.

- Add the flour, the baking powder and the soda.

- Keep on kneading with manual or electrical rods until you get a smooth dough.

- Pour this mixture into a non- stick baking sheet

– 25 x 35 cm - ( you can also use non-stick oven paper)

- Bake the biscuit for about 35 minutes at 170ºC until it has increased its size and is brown.

- The baking time depends on the type of oven, so a good tip to know if the biscuit is made is pricking it with a fork. If it comes out clean, the biscuit is made.

- Let it cool and spread powdered sugar just before serving.
