The Swabian answer to mac and cheese... Home made pasta and melted cheese...
Ingredients
- 500g (spätzle) flour
- 4 eggs
- 200g cheese
- 6-7 onions
- 3 tsp butter
- salt, pepper
Stir the flour with the eggs , one pinch of salt and a bit water. Mix it good and then let it sit for a few minutes. Grate the cheese and peel the onions and cut them into small slices. Fry them in a pan with butter until they are brown. Boil two liters of saltwater. Spread the dough portioned on a wet board, smooth the front with a knife and scrape it in slim dough-stripes into the boiling water. You can also push it through a noodle machine. If they flood on the surface of the water, take them out with a skirnmer and let them drip of.
Put the spätzle in layers in a pan alternating with pepper and cheese.
Serve them with the fried onions.
